« Banana Crumb Muffins »

Ripe bananas are great to bake with because everything they touch turns out moist, sweet and delicious. This recipe is no exception. And as an added bonus, the batter is super easy to make!

I love this recipe because it doesn't require any 'fancy' kitchen equipment.


All you need is a rubber spatula to combine the wet ingredients (mashed bananas, egg, butter and sugar) and the dry ingredients (flour, baking powder, baking soda and a pinch of salt). 

This batter is suppose to be chunky, so resist the urge to over-mix.

I like to add chopped pecans (or walnuts) to the streusel topping for added texture and flavor. Oatmeal would also do the trick.

Breakfast can be on the table in 30 minutes. Can't beat that!
